It is always good to honor a great cook at Easter for part of Easter is a big Easter dinner that has to be cooked by someone and that someone is usually a very good cook.
Big Sandy is filled with many great cooks. "The Mountaineer" has done feature after feature of the cadre of cooks that surround us here. Whether it is Linda Schwarzbach's Swedish Meatballs for the school, or Josh Danreuther's pizza or Tammy Houle's famous prime rib, this town is filled with people who love to put wonderful food on their tables.
Donna Jenkins is one of the best. She is so dedicated to food that she carries her cookbooks with her wherever she works. If "The Mountaineer" needs a recipe for the Senior Citizen's Column, you can be sure that Donna will have one of her cookbooks handy and readers will have one more great recipe.
Donna cooks part time at the Senior Citizen's Center, has cooked at the hospital and when husband Loren was in the Legislature, she even cooked at the Governor's Mansion in Helena.
To honor Easter and Donna, "The Mountaineer" asked her for her absolute favorite recipe for Easter. That very afternoon she brought to our office this recipe for
7UP Party Salad
½ cup 7UP
2 ½ cups marshmallows
1 3oz package lime jell-O
2 3oz packages softened cream cheese
1 20 oz can crushed pineapple not drained
½ cup chopped nuts
2 cups Cool Whip
½ cup mayo
Combine 7UP and marshmallows. Cook over low heat until marshmallows are melted. Add gelatin stirring until dissolved. Add hot mixture slowly to cream cheese and beat until smooth. Add pineapple and walnuts. Chill until partially set. Fold in Cool Whip and mayo. Blend thoroughly and cool.
