I love this salad in the summer and I have not made it for a decade or more. It seems like I have forgotten all about it. Called Cucumbers in Sour Cream, it is best served just when made and the sour cream mixture is thick. But keep it longer and it is still very good.
You will need
2 cucumbers sliced into thin rounds
One red onion sliced into rings
½ cup sour cream
1tablespoon vinegar
2 tablespoons sugar
Pepper to taste.
Tobacco to taste
Lots of ground sea salt.
Take your sliced onion and cucumber and spread them over a cookie pan. Grind up pure sea salt on them and let them sit for several hours. My recipe book says to drain them after the several hours but I don’t. I like the taste of the sea salt on cucumbers and onions. It gives them an extra crunch and a good taste.
Mix all of the ingredients together. Mix well and use plenty of good ground pepper on the mixture. Blend in with the onions and cucumbers and serve soon.
Make this once and you will be making it again and again. It is old time summer comfort food. Whose grandmother did not bring this to a picnic?
