Wednesday, April 19 crispy chicken sandwich, tator tots, salad and dessert.
Thursday, April 20 cheesy taco sticks, lettuce, tomato, chips and dessert.
Friday, April 21 ham and bean soup, corn bread and dessert
Monday, April 24 baked spaghetti, vegetables, garlic bread and dessert for the Lunch of the Week!
Tuesday, April 25 chicken and rice chimichangas, refried beans and dessert.
If you like baked chicken and rice chimichangas, here is the recipe. You will need
1 ½ cups cooked and shredded chicken
¼ cup salsa
1 ½ tablespoons ground cumin
1 teaspoon dried oregano
2 tablespoons canola or vegetable oil, divided
1 package Knorr Fiesta Sides (Spanish rice)
1 ¼ cups shredded Colby jack cheese
4 burrito size flour tortillas
Combine the cooked chicken with salsa, cumin and oregano and set aside.
Prepare the Knorr according to package directions. Cover and simmer for 7 minutes. Remove from heat.
Stir in the chicken mixture and cheese. Divide the mixture between flour tortillas, wrap and place seam side down on a lined baking sheet. Brush with the remaining oil and place in oven to bake for 20 minutes or until golden brown and crispy at 425. Serve, if desired with your favorite toppings such as shredded cheese, sour cream, chopped tomato, chopped cilantro, chopped green onion, chopped lettuce and lime wedges.
