Tuesday, November 7 baked enchiladas, salad and dessert.
This week the cooks recommend Rhubarb Coffee Cake.
1 ½ cup flour
1 cup sugar
2 eggs
1 cup sour cream
1 teaspoon baking soda
½ teaspoon salt
2 cups rhubarb cut in quarter inch pieces
Toppings include chopped walnuts, ½ cup brown sugar and 1 teaspoon cinnamon.
Preheat oven to 350 degrees. Grease 9 by 13 pan. In a large bowl mix the first seven ingredients and blend well with wooden spoon. Pour the mixture into a 9 by 13 baking pan. Ina small bowl combine the three ingredients listed under toppings. Sprinkle the topping mixture evenly on top of the rhubarb mixture and bake in 350 degree oven for 35 to 40 minutes. Serve warm with whipped cream.
