Since it is getting toward Thanksgiving, here is a dish to use up some of that leftover turkey. I found this recipe in a cookbook from Kalispell Lakeside, Montana
Turkey Tetrazzini
You will need a quarter cup of butter
a quarter cup of flour
½ teaspoon salt
¼ teaspoon pepper
½ cup grated Parmesan
1 cup chicken broth
1 cup whipping cream
2 tablespoons sherry or white wine
3 oz can sliced mushrooms
7 oz spaghetti or linguine noodles cooked
2 cups cubed and cooked turkey
for color throw in a handful of frozen peas just before serving
heat oven to 350
melt butter in a large sauce pan over low heat. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly.
Remove from heat and stir in broth and cream. Heat to boiling, stirring constantly. Boil and stir one minute, Stir in wine, spaghetti, turkey and mushrooms.
Bake uncovered until bubbly. To brown place briefly under broiler.
